Beyond warm cosy fires, ski season, rugging up on the couch and comfort foods, there are plenty of Winter produce that make for delicious dishes.

Here in South-East Queensland and parts of Northern NSW vegetables like spinach, silverbeet and early-maturing cabbage, and herbs like dill, garlic bulbs, lavender, lemon balm, marjoram, mint, oregano, parsley, sage and thyme are all in season.

In northern parts of the state broccoli, cabbage, capsicum, carrot, cauliflower, cucumber, eggplant, peas, potato, pumpkin, spinach, sweet corn and tomatoes are in full bloom.

The Goodness Gracious

If you need a big boost to get your day started or get you through the cooler weather, this first dish is sure to give you lots of energy and fill you to the brim!

The Goodness Gracious bowl is made up of “Cape Grim” beef brisket, potato & kale gnocchi, cocktail onions, pickled tomatoes, red pepper sauce, dukkah, sourdough, and eggs your way. Combining seasonal, comforting and warming ingredients make this a great Brisbane winter dish to enjoy right now.


Smoked Duck Breast

Malt Dining pride themselves on using the freshest, organic ingredients to create an array of delicious dishes. Think Modern Australian cuisine created with the finesse of a formal dining venue.

Malt’s food reflects the restaurant’s grassroots beginning as a municipal marketplace by using the freshest of local produce and sourcing sustainable seafood. And this dish on their new winter menu is no exception.

Although the key ingredient, smoked duck breast, isn’t a  seasonal winter ingredient, its richness is certainly a delicious way to fill you up this winter. Plus, it does include cucumber, which doesn’t necessarily come to the top of mind when thinking of winter vegetables. To make it even more interesting, it is served grilled.

This entree is Malt’s Smoked Duck Breast with crispy rice, a soft egg, and grilled cucumber. Both gluten and dairy free, it also caters to some of the most common dietary requirements.


Whole Smoked Eggplant

Gerard’s Bistro offers a Modern Australian tapestry of flavours woven with inspiration from the great cuisines of the Maghreb and the Middle East.  Guests are encouraged to share the menu in a banquet experience, complimented by a unique and imaginative wine and drinks list.

So keeping with this, we’re showcasing two dishes here, which not only complement each other, but are also great winter dishes to share.

Firstly, the Whole smoked eggplant, which is complimented with turmeric, mint, kishke yoghurt and blackened onions. What better way to highlight a winter produce then serving it whole?

The second dish is the Roasted lamb rump with glazed lamb bacon, fresh set cheese, pea leaf oil, and buckwheat. Roasts are such a great winter warmer and even more enjoyable when prepared by expert chefs!


Pumpkin Agnolotti

When I think of winter produce, pumpkin immediately comes to mind so it would be remiss to leave a pumpkin dish out of this list. This fourth dish is all about pumpkin.

Ecco’s Pumpkin Agnolotti can be enjoyed either as an entree or a main. It is dressed in a sage spiced pumpkin veloute and walnut salsa. Such a yummy winter dish!


Hot Dark Chocolate Brownie

Victoria Park Bar and Bistro is the perfect setting for a casual meal. It overlooks the driving range and Brisbane city skyline but is also perfect for a bit of cheeky dessert.

The seasonal menu is crafted by Award Winning Executive Chef Jason Peppler. It showcases fresh, local ingredients and flavours. This particular dish is less about fresh and more about decadence.

Last, but not least, this fifth dish is sure to look after those sweet comfort food cravings. It is a Hot Dark Chocolate Brownie topped off with milk ice cream and salted caramel sauce. Plus, it’s gluten-free!
